I've posted a link to The New Work of Composing to the left This text (also by Computers and Composition Digital Press from Utah State), is a collection of digital essays on composing & new media, and while they are not primarily ethnographies, they do include "ethnographic moments" = and more importantly, they open up LOTS of ideas about how we might want to capitalize on what a new media format can do for us, and they present some useful discussion of how new-media composing works. For example, Re-inventing invention presents a collage of new media composing in action, as does the composing narrative that accompanies Mr. Secrets; and Scholarship on the move analyzes the effectiveness of different presentations in multimodal forms, among other things.
So this collection is worth taking a look at!
